Yummy Gluten-free Chocolate Chip Cookies

These cookies got a thumbs up even from my kids who remember how I used to bake before I went healthy conscious on them!!

Ingredients

– 2 cups quinoa flour (easily available, actually)
– 1 teaspoon baking soda (try aluminum free)
– A pinch of salt
– 2/3 cup melted and cooled coconut oil 
– 1 1/3 cups coconut sugar
– 2 eggs
– 2 teaspoons pure vanilla (available at Costco)
– Chocolate chips

Directions

  1. In a separate bowl mix coconut oil and sugar until smooth.
  2. Add in eggs and vanilla.
  3. Beat until smooth.
  4. Add in dry ingredients.
  5. Add in chocolate chips.
  6. Shape and bake for 10 min at 350
