Protein Pancakes for Sustained Energy

This recipe has all the nutrients your child needs for great behavior. Lots of protein, fiber, and omega-3.  Good food = Better behavior= Easier parenting!

INGREDIENTS

  • 1 cup gluten-free oats
  • 1 banana
  • 2 eggs
  • ½ cup egg whites- from 3 eggs  
  •  4 teaspoons aluminum-free baking powder
  • Pinch of sea salt
  • Pinch of cinnamon
  • 1 scoop of protein powder- my preferred brand is Garden of Life
  • 2 tablespoons ground flaxseeds

DIRECTIONS

  • Put all the ingredients into a blender on medium speed and blend until well mixed
  • Heat a nonstick griddle to medium heat
  • Put ¼ cup batter per pancake on the griddle
  • You can sprinkle on a few chocolate chips or blueberries
  • When the edges start to look dry, after about 2-3 minutes, flip and cook the other side
  • Top with pure maple syrup
