Cute mini veggie burgers
Packed with nutrition, these burgers are as yummy as they are cute. Lentils are an excellent source of protein which is vital for growth, strength, and brain power!
They’re also a great source of zinc and iron, both essential for children’s growth and development. Pack these in your kid’s lunchbox or serve them as a nutritious supper.

INGREDIENTS
- 1 small onion
- 3 cloves garlic
- 1 cup grated carrots
- 2 cups cooked red lentils
- ½ cup canned chickpeas- drained and rinsed
- 2 eggs
- 1 ¼ cups oat flour
- 2 teaspoons paprika
- 2 teaspoons salt
DIRECTIONS
- In a food processor fitted with the S-blade, pulse onion, and garlic until they are finely chopped
- Add carrots, lentils, chickpeas, eggs, and seasoning
- Stir in oat flour
- Heat a thin layer of avocado oil in a large frying pan
- Using a large cookie scoop, drop scoops into the pan
- Using the back of a spoon, flatten each ball down to look like a mini burger
- Cook burgers until they are crispy and then flip to the other side
- Add more oil to the pan as needed and repeat until the batter is finished
