Crispy and Yummy Brocolli Burgers
I know it’s green, and that may scare some kids away, but I find my kids enjoy these, even the picky ones. Broccoli is a cruciferous vegetable that is rich in vitamins and minerals. They also contain phytonutrients that lower inflammation. Additionally, they are high in fiber and plant-based omega-3s called alpha-linolenic acid. You already know that I am a fan of getting as many omegas in the diet as possible.

INGREDIENTS
- 2 Tablespoons avocado oil
- 1 onion diced
- 1 teaspoon garlic
- 4 cups cooked broccoli or one 24 oz. bag of frozen broccoli defrosted and pulsed in the food processor
- ½ cup oat flour
- ¼ cup nutritional yeast
- 1 egg
- 1 teaspoon Himalayan salt
- Pepper
DIRECTIONS
- In a large skillet, heat oil and saute the onion and garlic
- Add broccoli and mix until well combined
- Turn off the heat and mash the mixture well
- Add oat flour, nutritional yeast, egg, salt, and pepper
- Transfer to a bowl and refrigerate for at least 30 minutes
- With wet hands form into patties
- In a frying pan, heat some more avocado oil
- Cook burgers until they are crispy and then flip to the other side and fry until crisp
