Crispy and Yummy Brocolli Burgers

I know it’s green, and that may scare some kids away, but I find my kids enjoy these, even the picky ones. Broccoli is a cruciferous vegetable that is rich in vitamins and minerals. They also contain phytonutrients that lower inflammation. Additionally, they are high in fiber and plant-based omega-3s called alpha-linolenic acid. You already know that I am a fan of getting as many omegas in the diet as possible.

INGREDIENTS

  • 2 Tablespoons avocado oil
  • 1 onion diced
  • 1 teaspoon garlic
  • 4 cups cooked broccoli or one 24 oz. bag of frozen broccoli defrosted and pulsed in the food processor
  • ½ cup oat flour
  • ¼ cup nutritional yeast
  • 1 egg
  • 1 teaspoon Himalayan salt
  • Pepper

DIRECTIONS

  • In a large skillet, heat oil and saute the onion and garlic
  • Add broccoli and mix until well combined
  • Turn off the heat and mash the mixture well
  • Add oat flour, nutritional yeast, egg, salt, and pepper
  • Transfer to a bowl and refrigerate for at least 30 minutes
  • With wet hands form into patties
  • In a frying pan, heat some more avocado oil
  • Cook burgers until they are crispy and then flip to the other side and fry until crisp
