One Bowl Blueberry Muffin

This recipe is so delicious and the blueberries have high antioxidant levels, which fight free radical damage to keep the cells healthy. They are also low in sugar and a good source of fiber. They are quick and easy to make in one bowl.

INGREDIENTS

Dry Ingredients

  • 2 cups + 4 tablespoons oat flour
  • 2 cups almond flour 
  • ¼ teaspoon sea salt
  • 1 1/2teaspoons baking soda

Wet Ingredients

  • 4 eggs, slightly beaten
  • ⅔ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 cup almond milk
  • 2 tablespoons avocado oil
  • 2 teaspoons apple cider vinegar (or lemon juice)
  • 2 cups fresh organic blueberries

DIRECTIONS

  • Preheat the oven to 350
  • In a large bowl combine all the dry ingredients 
  • Add the wet ingredients and combine
  • Fold in the blueberries
  • Use a ¼ cup measuring cup to scoop the batter into muffin tray pan
  • Bake 20-25 min
