Nut-free Granola Bar Snack
With the summer fast approaching, this is a great snack for camp, family outings, and easy to take on road trips. It is also nut-free. I replaced the conventional nut butter with a great new product called Granola Butter. Oat Haus Granola Butter | Nut-free, School-safe Nut Butter Alternative Granola Butter is made with all clean ingredients and can be used as a replacement in any recipe that calls for nut butter. It comes in many flavors, but the original and vanilla flavors work best in this recipe. The flaxseeds in the recipe are an easy way to get omega-3 into your child’s diet.
Try this recipe- I am sure you will have many happy snackers.

INGREDIENTS:
- 2 cups gluten-free quick-cooking oats
- 1 cup gluten-free Rice Krispies ( I use Made Good brand)
- 1 cup mini chocolate chips
- ¼ cup ground flax seeds
- ¼ teaspoon kosher salt
- ½ cup honey
- ⅓ cup granola butter
- ¼ cup coconut oil- melted
- 2 teaspoons vanilla extract
DIRECTIONS:
- Preheat the oven to 325 degrees
- Line an 8×8 inch baking dish with parchment paper, with the paper hanging over the sides
- Stir the dry ingredients in a large bowl
- In a medium bowl, stir together the honey, granola butter, coconut oil, and vanilla. I use an immersion blender to combine it well
- Pour wet ingredients into dry ingredients and stir until well combined
- Press the mixture into the prepared dish and press hard so that the mixture is firmly pushed into the dish
- Bake 20-22 minutes
- Let it cool at room temperature and then in the fridge for 1 hour
- Gently lift out of the dish and slice into bars
