Yummy Gingerbread Oatmeal

This is a delicious twist on a classic. Both the oats and cinnamon balance blood sugar, which is critical for a balanced mood throughout the day. Adding molasses gives your kid the added bonus of mineral support. Molasses is a good source of iron, selenium, and zinc.

Ingredients

3 cups Oats (rolled)

6 cups Water

1 cup Unsweetened Almond Milk

2 tsps Pumpkin Pie Spice

1/2 tsp Ground Allspice

2 tsps Vanilla Extract

2 tbsps Blackstrap Molasses

1/4 cup Cashew Butter

1 cup Pecans (roughly chopped)

Directions

1. Add the oats and water to a small pot. Bring to a gentle boil over medium heat and cook for 4 to 5 minutes. Then add the almond milk, pumpkin pie spice, allspice, vanilla, and molasses and stir. Cook for an additional 2 to 3 minutes, until cooked through.

2. Add the oats to a bowl, top with cashew butter and pecans.
