Protein Pumpkin Energy Balls

Fall is in the air. Try this yummy, quick snack that packs a major protein punch!

INGREDIENTS

  • 10 Medjool dates
  • 3 scoops plain or vanilla protein powder ( I use the Garden of Life brand)
  • 1 cup almond flour
  • 1 tsp pumpkin spice or cinnamon
  • 1/4 cup runny cashew or almond butter (if it’s not runny, you may need to thin out the dough with more dairy-free milk)
  • 1 tsp pure vanilla extract
  • 3/4 cup pumpkin puree (start with 1/2 cup and add the 1/4 if you feel it’s too dry)
  • 1/8 cup dairy-free milk
  • powdered sugar or replacement (Lakanto powdered Monk fruit)

DIRECTIONS

  • Add all the ingredients to a food processor and blend until a thick and smooth dough forms.
  • Roll the dough into balls 
  • Then roll the balls in the powdered sugar
  • Place in the freezer to set for 45 min to one hour.

Store in the fridge or freezer and thaw a bit before eating.
