Protein Pumpkin Energy Balls
Fall is in the air. Try this yummy, quick snack that packs a major protein punch!
INGREDIENTS
- 10 Medjool dates
- 3 scoops plain or vanilla protein powder ( I use the Garden of Life brand)
- 1 cup almond flour
- 1 tsp pumpkin spice or cinnamon
- 1/4 cup runny cashew or almond butter (if it’s not runny, you may need to thin out the dough with more dairy-free milk)
- 1 tsp pure vanilla extract
- 3/4 cup pumpkin puree (start with 1/2 cup and add the 1/4 if you feel it’s too dry)
- 1/8 cup dairy-free milk
- powdered sugar or replacement (Lakanto powdered Monk fruit)
DIRECTIONS
- Add all the ingredients to a food processor and blend until a thick and smooth dough forms.
- Roll the dough into balls
- Then roll the balls in the powdered sugar
- Place in the freezer to set for 45 min to one hour.
Store in the fridge or freezer and thaw a bit before eating.
