Gluten-Free Pizza Bites

This easy recipe takes only a few minutes to put together and can easily go into your kid’s lunchbox.

INGREDIENTS

DOUGH

1 and ⅓ cups gluten-free flour

½ cup almond flour

½ teaspoon garlic powder

½ teaspoon Himalayan salt

¼ cup avocado oil

1 Tablespoon apple cider vinegar

½ cup water

FILLING

Pizza sauce or tomato sauce

Small diced veggies such as peppers and/or mushrooms

dairy -free cheese- either feta squares( Plant Ahead) or shredded (daiya)

DIRECTIONS

  1. Combine all ingredients in a mixing bowl

2. Roll out the dough in between 2 pieces of parchment paper

3. Cut the dough into even rectangles

4. Put filling ingredients onto half of each rectangle

5. Close each “bite” by folding half the dough over the filling

6. Seal the sides by pressing down on the dough

7. Bake at 350 for 30 min.
