Fluffy Oat Flour Waffles

Oats and cinnamon are both beneficial in blood sugar stability. Oats are also high in iron, which many kids are deficient in.

These waffles are light and crispy on the outside, fluffy on the inside, and healthy too!

INGREDIENTS

  • 3 cups oat flour
  • 4 teaspoons aluminum-free baking powder
  • 1 teaspoon salt
  • Pinch of cinnamon
  • 1 ½ cups almond milk
  • ½ cup melted coconut oil
  • 4 eggs
  • 6 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

DIRECTIONS

  • In a mixing bowl, whisk together oat flour, baking powder, salt, and cinnamon
  • In another bowl, whisk together milk, coconut oil, eggs, maple syrup, and vanilla extract
  • Pour wet ingredients into dry ingredients. Stir until just combined (the batter will be a bit lumpy)
  • Let the batter rest for 10 minutes so that the oat flour can soak up the moisture.
  • Preheat the waffle iron
  • Pour some batter onto the waffle iron and spread across the surface with a flat knife
  • Close the lid and wait for the machine to beep
  • Repeat with the remaining batter
  • Serve with pure maple syrup 
  • If you make the recipe in advance, reheat them in a toaster oven
