FABULOUS FIBER CHOCOLATE MUFFINS

This is a sneaky recipe-yup, it’s loaded with veggies! But it actually tastes good!

Makes 2 dozen

INGREDIENTS:

  • 3-5 ripe bananas
  • 1 cup peeled and cubed zucchini
  • ½ cup cubed carrots
  • ½ cup organic spinach leaves
  • ¼ cup honey
  • 1 cup peanut butter
  • 1 teaspoon pure vanilla extract
  • ¼ cup cocoa
  • 1 tablespoon flax seeds
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 3 eggs
  • Chocolate chips

DIRECTIONS

  • Throw all of the ingredients, except the chocolate chips into a high-powered blender
  • Blend
  • Add chocolate chips
  • Pour into muffin tins
  • Bake at 350 for 20 minutes
  • Refrigerate
