Caramel Honey Loaf Cake
Insanely delicious!!
INGREDIENTS
Caramel Sauce (optional)
- 1/3 c date paste*
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 tsp tapioca flour
- 2 tbsp coconut yogurt
- 1 c boiling water
Cake
- 1 cup brewed coffee- 1 Tablespoon instant coffee combined with 1 cup of water, cooled
- 1 teaspoon baking soda
- 3 eggs
- 3/4 cup organic sugar or monk fruit sweetener
- 1/2 cup coconut sugar
- 3/4 cup avocado oil
- 1cup honey
- 1 Tablespoon lemon juice
- 2 3/4 cups 1:1 gluten-free flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup caramel sauce
DIRECTIONS
Caramel sauce:
- Add the date paste, vanilla extract, salt, tapioca flour, and coconut yogurt to a small saucepan.
- On medium-high heat whisk until combined.
- When it’s thickened and starts to bubble, pour the boiling water, a couple of tablespoons at a time while whisking to ensure smoothness.
- Allow it to simmer while whisking every so often until it’s thickened.
Cake:
- Preheat oven to 350.
- Grease 2 loaf pans and line it with parchment paper or one bunt pan (if using a bunt pan, make sure to spray it very well)
- Make the coffee and put it aside to cool thoroughly.
- Once the coffee is cool, add the baking soda and set it aside.
- In a large mixing bowl add eggs, sugars, oil, honey, and lemon juice.
- Mix for 1 minute until the mixture is creamy.
- In another bowl combine flour, baking powder, cinnamon, and nutmeg. Whisk together.
- Alternate adding the flour mixture and the coffee mixture into the creamed batter.
- Take off 1/2 cup of the batter and mix it with 1/2 cup of the caramel sauce. (this step is optional. The cake is delicious on its own as well)
- Pour the remaining batter into the prepared pan.
- Top with the caramel mixture, if you are using it.
- Bake for 50 minutes if you are using loaf pans and perhaps a few minutes longer if you are using a bunt pan. Check for readiness.
- Allow the cake to cool in the pan for 15 minutes before taking it out.
Drizzle the rest of the caramel sauce on top

*To make the date paste, soak dates for an hour in boiling water, drain then blend in a food processor until smooth
